It is a symbolic product that Hakutsuru is proud of, which has a rich, delicate and deep taste, brewed from the skill and aspiration inherited from Hakutsuru long sake brewing history.
Yamada Nishiki’s brother sake rice, “Hakutsuru Nishiki,” is highly ground and slowly fermented at low temperature for a long period of time. The bag is hung at low temperature to bring out the delicate and rounded taste of “Hakutsuru Nishiki” along with the fruity scent of apples and pears.
“Hand wash (rice wash)”, “Limited water absorption (immersion)”, traditional manual lid koji method, whole body Junmai Daiginjo that collects only the drop sake that drips naturally without applying pressure.

This Junmai Dai Ginjo Sake is a “Symbol” of all the masterful techques and ambitions we have long inherited from our predecessors. “Hakutsuru Nishiki” rice, sibling of “YAMADA NISHIKI”, was finely polished and Sake was fermented carefully at a lower temperature. It has an aroma like that of apples or pears and a delicate round taste. All hand-crafted thoughout the process, like washing rice by hand or separating Sake from the lees without external pressure, by hanging the mash in bags to allow the liquid to drip out under its own weight.
